Ingredients
  

  • 4 bags Defrosted TJ's pie crusts
  • 2 boxes TJ's Peach Slices
  • 1/2 cup Softened TJ's Brown Sugar
  • 1 TJ's Lemon Juice
  • 1/2 teaspoon TJ's Ground Cinnamon
  • 1/4 teaspoon TJ's Ground Ginger
  • 1 T.J. egg
  • 11x15 inch Rimmed baking sheet

Instructions
 

  • The very first thing that we need to do is to set the oven to 425 °F. Place one rack in the middle and one on the lowest rung of the oven. On the bottom rack of the oven, place a sizable cookie sheet.
  • On a cutting board covered in parchment, unroll two rings of dough, overlapping their edges. Roll creases in the dough together using a rolling pin sprinkled with flour. An area that is slightly larger than the baking sheet should be formed by folding the edges in. Transfer dough to baking sheet, allowing edges to extend over pan sides. At the same time, it needs 10 minutes in the refrigerator not less or more than that.
  • In the third step, now remove the baking sheet from the refrigerator and start creating holes in the dough with the help of a thin stick or a fork maybe. Now place the sheet on the rack and let it bake for 15 minutes.
  • For now, again you need to repeat the rolling thing we have done above because here we are trying to make the top layer.
  • Now you can add other things that you have cut already such as brown sugar, peaches, cinnamon, lemon juice etc.
  • Fill a sieve with the peach mixture to remove any extra liquid. Fill the par-baked crust evenly with the strained peaches, then top with the remaining dough.
  • Around the borders of the baking sheet, pinch the dough edges together with a fork.
  • Make a few small holes in the dough to allow it to vent during baking; you can also use a knife to cut the dough into the desired shapes.   
  • The egg should be beaten in a small basin. Apply egg wash to the top crust and sprinkle with brown sugar. Bake the pie for 70 minutes, turning the pan halfway through, on the center rack of the oven.
  • When the pie filling is bubbling and the crust is golden, remove it from the oven. Allow it to chill for an hour before serving.
