Take a medium-sized mixing basin and mix flour, salt, and baking soda in it.
In another large bowl, add butter and sugars and mix them with an electric mixer until they are fluffy. Then add alcohol, vanilla extract, and egg in it and beat them together.
Then add the flour mixture to the butter mixture. Mix them but avoid overmixing. Add the berries and nuts and fold them carefully.
Line the cookie sheets with parchment paper and then add the spoonfuls of the colourful batter on it.
Bake them in the preheated oven for 10 minutes so that they turn golden brown from the top. Take them out of the oven.
Let them cool for some minutes on the cookie sheets and then move to the serving tray. Pioneer Woman Fruitcake Cookies are ready! Bon Appetit!
Notes
When you take out the cookies after they are baked, check for their texture. They should be tender because they harden by themselves as time passes.
For a spicy touch, add some cinnamon powder.
If you are allergic to nuts, you can skip them in the recipe and replace them with an equal amount of berries.
