A very excellent option for snacks, Queso Fresco Quesadillas are cheesy and when served with tomatillo salsa, are just heavenly. These Queso Fresco Quesadillas are made simply of tortillas and some vegetables like scallions, tomatoes, and cilantro.
On a working surface, lay 2 tortillas. Spread the cheese so that it is evenly distributed between both tortillas.
Add the slices of Roma tomatoes to the cheese layer. Then add cilantro and scallions.
On these ingredients layered down on the tortillas, lay down the remaining tortillas so that the ingredients are sandwiched between the tortillas.
Take a large saute pan. Coat its inside with clarified butter. Then place a quesadilla in the pan. Brush it with clarified butter.
Cook both sides by flipping when one side is done. Bring out a golden brown color. Take it out and cut it into 6 equal pieces. Repeat the same with the other one.
Make the tomatillo sauce by preheating the broiler and then broiling them until they start to blacken.
Let them cool and then add in a blender. Add all the remaining ingredients along with the tomatillos. Blend and puree them. Serve with Quesadillas. Enjoy!
