Ingredients
  

  • 2 cups  Chickpea garbanzo bean flour
  • 1 teaspoon Sea salt
  • 3 ½ cups  Water
  • 1/2 teaspoon Freshly ground black pepper
  • 1 ½ tablespoon Fresh flat-leaf parsley (Minced)
  • Grapeseed or canola oil (for frying)
  • 10  Brioche or hamburger buns
  • Lemon wedges (for serving)
  • Parmigiano Reggiano cheese (Freshly grated)

Instructions
 

  • Heat water and salt in a saucepan over medium heat.
  • Slowly whisk in chickpea flour while stirring constantly.
  • Stir in pepper and parsley; the batter will be thick.
  • Coat loaf pan, line with parchment paper. (Watch how here.)
  • Fill the loaf pan, smooth the top, cover, and refrigerate for 2 hours.
  • Remove, invert, and slice dough into ¼-inch rectangles.
  • Heat oil to 350°F in a deep skillet over medium-high.
  • Fry slices for 2 min/side until golden and crisp.
  • Drain panelle on a paper-lined platter.
  • Add salt, squeeze lemon on the fritters.
  • Put fritters on buns, and add cheese if desired.
  • Top with a bun, wrap, and enjoy.
