1 tablespoon Olive oil 1 Onion (chopped) 2 cloves Garlic (chopped) 1 stick Celery (chopped) 1 Large carrot (chopped) 1 Small butternut squash (peeled, deseeded, and chopped) 1 Small sweet potato (peeled and chopped) 1 Bay leaf 2 Sprigs of fresh thyme 1.5 liters Vegetable stock Salt and black pepper (freshly ground) Chopped fresh parsley (to serve)
Heat olive oil in a large saucepan on medium heat.
Sauté onion until soft, around 5 minutes.
Add garlic, celery, and carrot; cook for 5 minutes, stirring.
Combine butternut squash, sweet potato, bay leaf, and thyme.
Pour in veggie stock, and bring to a boil.
Reduce heat, and simmer for 30 mins until veggies tender.
Discard bay leaf and thyme.
Blend using an immersion blender or batches in a blender.
Season with salt, and black pepper.
Serve hot, garnish with parsley.
