Ingredients
  

  • 1 tablespoon Olive oil
  • Onion (chopped)
  • 2 cloves Garlic (chopped)
  • 1 stick  Celery (chopped)
  • 1 Large carrot (chopped) 
  • Small butternut squash (peeled, deseeded, and chopped)
  • Small sweet potato (peeled and chopped)
  • Bay leaf
  • Sprigs of fresh thyme
  • 1.5 liters  Vegetable stock
  • Salt and black pepper (freshly ground)
  • Chopped fresh parsley (to serve)

Instructions
 

  • Heat olive oil in a large saucepan on medium heat.
  • Sauté onion until soft, around 5 minutes.
  • Add garlic, celery, and carrot; cook for 5 minutes, stirring.
  • Combine butternut squash, sweet potato, bay leaf, and thyme.
  • Pour in veggie stock, and bring to a boil.
  • Reduce heat, and simmer for 30 mins until veggies tender.
  • Discard bay leaf and thyme.
  • Blend using an immersion blender or batches in a blender.
  • Season with salt, and black pepper.
  • Serve hot, garnish with parsley.
