Ingredients
  

  • ¼ teaspoon  Ground cinnamon
  • ¼ teaspoon  Ground cloves
  • ¼  Whole nutmeg, freshly grated
  • ½ oz Butter (15g) 
  • 1 clove  Garlic (chopped very small)
  • 1 lb Apples (peeled, cored and chopped small) (450g) 
  • 1 lb Onions, chopped small (450g) 
  • 2 lb Red cabbage (1kg) 
  • 3 tablespoons  Brown sugar
  • 3 tablespoons  Wine vinegar
  • Salt and freshly milled black pepper

Instructions
 

  • Preheat the oven to gas mark 2, 300°F (150°C).
  • Remove tough leaves, and quarter cabbage, and discard hard stalks.
  • Finely shred cabbage with a sharp knife or food processor.
  • Layer cabbage, salt, pepper, onions, apples, garlic, spices, sugar.
  • Repeat layers until all is used.
  • Add wine vinegar and dots of butter on top.
  • Cover tightly, and bake slowly for 2-2½ hours, stirring occasionally.

Notes

  • Slicing the cabbage thinly makes it cook evenly and be nice and soft.
  • Let the flavours mix by cooking it on low heat for the best taste.
  • The flavours get even better as it sits, becoming really tasty.
