¼ teaspoon Ground cinnamon ¼ teaspoon Ground cloves ¼ Whole nutmeg, freshly grated ½ oz Butter (15g) 1 clove Garlic (chopped very small) 1 lb Apples (peeled, cored and chopped small) (450g) 1 lb Onions, chopped small (450g) 2 lb Red cabbage (1kg) 3 tablespoons Brown sugar 3 tablespoons Wine vinegar Salt and freshly milled black pepper
Preheat the oven to gas mark 2, 300°F (150°C).
Remove tough leaves, and quarter cabbage, and discard hard stalks.
Finely shred cabbage with a sharp knife or food processor.
Layer cabbage, salt, pepper, onions, apples, garlic, spices, sugar.
Repeat layers until all is used.
Add wine vinegar and dots of butter on top.
Cover tightly, and bake slowly for 2-2½ hours, stirring occasionally.
Slicing the cabbage thinly makes it cook evenly and be nice and soft.
Let the flavours mix by cooking it on low heat for the best taste.
The flavours get even better as it sits, becoming really tasty.
