Ingredients
  

  • 900 Damsons (2 lb)
  • 250 Caster sugar (1.25 cups)
  • 1 teaspoon Lemon juice

Instructions
 

  • Wash damsons with cold water.
  • Halve damsons, remove stones using a knife or squeeze if ripe.
  • Simmer damsons in a pan for 10 minutes on low-medium heat.
  • Add sugar, lemon juice, and stir. Cook for 40 minutes till liquid reduces, stirring.
  • This should fit in about 2 quart jars

Notes

  • Choose ripe, firm damson plums for best taste.
  • Change sugar for what you like.
  • Let it simmer till it's thick, stir now and then.
