Ingredients
  

  • 1 lb  Ground Beef
  • 1 packet Taco Seasoning (1 oz)
  • 4 oz  Refried Beans
  • 4 oz Cheddar Cheese
  • 6 Tortillas (8 Inches) 
  • Pam Cooking Spray
  • Cooking Oil (For Frying)

Instructions
 

  • Begin by placing a saucepan over medium heat. In this saucepan, cook the ground beef until it's fully browned and thoroughly cooked.
  • Once the beef is cooked, introduce the taco seasoning. Mix it diligently, ensuring the seasoning spreads evenly throughout the beef.
  • Now, add the refried beans and cheddar cheese to the beef mixture. Stir continuously until the cheese melts, and all the ingredients blend harmoniously.
  • Spoon this delightful mixture onto the center of each tortilla. Carefully roll up the tortillas, ensuring a snug and secure wrap.
  • Preheat your oven to 350°F (175°C). Lightly spray a baking sheet with cooking spray, like Pam. 
  • Place the rolled tortillas seam-side down on the baking sheet. For a golden finish, lightly spray the tops of the tortillas with cooking spray.
  • Bake the tortillas in your preheated oven for about 12 to 15 minutes. Look for the edges to begin turning a lovely shade of brown.
  • Once baked, take the tortillas out and cut each one in half. Give them a little time to cool.
  • Now, place these tortilla halves in a ziplock bag and let them chill in the freezer. Freezing helps them hold their shape while frying.
  • In a deep fryer or a large pot, heat your cooking oil to 350 degrees Fahrenheit (175 degrees Celsius).
  • Carefully place the frozen tortilla halves into the hot oil and fry them for approximately 90 seconds on each side. The goal here is to achieve a beautiful golden brown and crispy exterior.
  • Using a slotted spoon, lift the fried Mexi Rolls from the oil and let them drain on a plate lined with paper towels.
  • Alternatively, you can deep fry the Mexi Rolls for 2.5 minutes until they reach that perfect golden brown and crispy texture.
