Bake potatoes at 425°F for 1 hour, cool. (Optionally, rub with olive oil and wrap in foil)
Slice each potato into 1/4" rounds.
Heat oil to 375°F.
Mix flour, cayenne, thyme, garlic powder, salt, and pepper (adjust to taste). Dip potato wedges in milk (or add egg if preferred), then coat with seasoned flour.
Deep fry wedges, avoid overcrowding, until golden and crisp.
Drain on paper towels and serve.

Use Seasoned Flour: The special seasoning in the flour is the secret. Don't skip it.
Fry Till Golden Brown: Keep an eye on them while frying. You want that lovely golden colour.
