Ingredients
  

  • Large Idaho baking potatoes
  • 2 cups  Flour
  • 1⁄2 teaspoon  Cayenne pepper
  • 2 teaspoons  Thyme
  • 1 teaspoon  Garlic powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1⁄2 cup  Milk
  • Oil (For Frying)

Instructions
 

  • Bake potatoes at 425°F for 1 hour, cool. (Optionally, rub with olive oil and wrap in foil)
  • Slice each potato into 1/4" rounds.
  • Heat oil to 375°F.
  • Mix flour, cayenne, thyme, garlic powder, salt, and pepper (adjust to taste). Dip potato wedges in milk (or add egg if preferred), then coat with seasoned flour.
  • Deep fry wedges, avoid overcrowding, until golden and crisp.
  • Drain on paper towels and serve.

Notes

  • Cut Potatoes Thin: Thin slices mean more room for tasty seasoning.
  • Use Seasoned Flour: The special seasoning in the flour is the secret. Don't skip it.
  • Fry Till Golden Brown: Keep an eye on them while frying. You want that lovely golden colour.
  • Serve with Ketchup: Mojo Potatoes and ketchup are a perfect match.
