Ingredients
  

For The Delicious Biscuit Base:

  • 300 gram  Digestives
  • 150 gram Butter unsalted
  • 25 gram Cocoa powder (optional)

For The Cheesecake Filling:

  • 100 gram Icing sugar
  • 300 ml Double cream
  • 125 ml Baileys Original
  • 600 gram Mascarpone (or full-fat cream cheese)

For The Decoration:

  • 150 ml  Double cream
  • 2 tablespoon Icing sugar
  • 50 gram Dark chocolate
  • Sprinkles

Instructions
 

For The Delicious Biscuit Base:

  • Use a mixer or rolling pin to make the biscuits very small.
  • If you want, add cocoa powder and mix well.
  • Mix with melted butter and press it hard into an 8"/20cm pan.
  • Put it in the fridge while you do other things.

For The Cheesecake Filling:

  • Blend mascarpone and icing sugar in a mixer until smooth.
  • Add cream and Baileys, and whisk till thick yet smooth.
  • Ensure it stands but isn't over-whisked; check thickness.
  • Spread over the bread base, and chill for 5-6 hours or overnight.

For The Decoration:

  • Create soft peaks with cream and sugar.
  • Drizzle melted dark chocolate on cheesecake.
  • Pipe cream around the sides, and add desired toppings.

Notes

  • Use full-fat cream cheese for the creamiest texture.
  • Don't mix the cheesecake too much; it should be smooth but not overdone.
  • For the crust, you can pick between digestive biscuits or graham crackers.
