Ingredients
  

  • 4 cups double cream
  • 4 cups chicken stock
  • 4 cups fish stock
  • 1.25 kg lobster heads
  • 75 gram tomato puree
  • 750 gram carb bodies
  • 150 ml white wine
  • 150 ml brandy
  • ½ chopped carrot
  • ½ small chopped onion
  • ½ chopped stick celery
  • 1 small bay leaf
  • 1 small sprig of thyme
  • 1 sprig flat-leaf parsley
  • 2 tablespoon olive oil
  • Sea salt
  • Cayenne pepper

Instructions
 

  • Firstly, crush all the crab bodies and lobster heads with a mallet to break them into fine pieces.
  • Take a large sauce[pan and heat 2 tablespoon olive oil in it. When the oil gets properly warm, add crushed lobster and crab bones to roast them.
  • When crab bones and lobster start to get roast, you can add chopped carrot, celery, and onion in it. After roasting the vegetables in low flame, add thyme, bay leaf, and parsley while stirring continuously.
  • After stirring the vegetables for almost 5 minutes, add 75-gram tomato puree in it. Sprinkle a pinch of cayenne pepper into it.
  • When tomato paste is cooked properly, add wine and brandy after turning OFF the flame.
  • When the mixture has been cooked properly, pour 1-liter fish and chicken stock in it. Heat it until it starts boiling. Sprinkle some salt according to your flavor.
  • Simmer the mixture for almost 40 minutes on low flame while continuously stirring it. Add a pack of cream to the simmered mixture. Blend cream in the mixture until a smooth gravy forms.

  • Whip brandy butter in the gravy to taste the seasoned dish. Garnish the lobster bisque and serve it to your family.
