Cheesy Dirty Fries

Ingredients
  

  • 1 tablespoon Butter
  • 1 Large Onion
  • 10 oz Frozen french fries
  • Cooking Oil Avocado or vegetable
  • Flaky sea salt
  • 2 tbsp Olive oil
  • Topping
  • 1/2 cup Mayonnaise 1/2 cup
  • Ketchup 2 tablespoons
  • White vinegar 1 tablespoon
  • Sugar 2 teaspoons
  • 1 pickled gherkin diced
  • Dijon mustard 1/2 teaspoon
  • Salt 1 pinch
  • Cheddar cheese 1 cup shredded
  • 1 slice bacon cut into thin strips

Instructions
 

  • Heat the oil and butter in a frying pan until the butter is foamy. Cook the onion for 10 minutes until it is brown. Set the onion aside after removing it from the pan.
  • Fry the bacon for five minutes until crispy. Mix all ingredients in a small bowl to make the dressing.
  • If you have a deep-fryer, use it. Fill a deep saucepan about a third full with the oil if not already done. On medium-high heat, bring the oil temperature up to 375 degrees.
  • Fry the fries in batches until golden, about 3 minutes. Dry with paper towels. While the fries are still hot, season them with sea salt.
  • Heat the oven to 450 degrees or use the broiler on its highest setting. Place the fries on a broiler-proof baking dish or gratin. Sprinkle the onions and bacon over the fries and cover them with cheddar cheese.
  • Placing the dish on top of the oven or close to the broiler is best. Place in the oven for 2 to 3 minutes, or until the cheese has just begun to melt. Put the fries in a serving bowl, spoon over the dressing, and serve immediately.
