2CupsVegetable MixYou can choose from pumpkin butternut squash, broccoli, cauliflower, green beans, etc.
Instructions
In a medium-sized frying pan, heat 1 teaspoon of olive oil on medium-high heat, then brown the sausages on all sides. Chop sausages into small pieces after removing them from the pan.
In a large pot, heat the remaining oil on medium heat, then add onion and cook, stirring regularly, until softened. Stirring regularly, add garlic, and cook for 30 seconds.
With the exception of the frozen peas and the chopped sausages, add the rest of the vegetables and cover with the beef stock. Stir in tomato sauce, curry powder, Worcestershire sauce, and season with pepper and salt. Put a lid on the pot and bring to a boil, then reduce the heat and cook for 30 minutes, uncovered.
In a large pot, mix cornstarch with 2 tablespoons of cold water, then add frozen peas and stir through. Cook the sauce uncovered for 5-10 minutes, stirring regularly until it thickens.
You may serve this dish with mashed potatoes or rice.
