Bring all the ingredients except ice and pork to a boil in a 2-quart nonreactive saucepan, then remove from heat.
Stir the mixture for 3 minutes on low heat. Add the ice to the mixture and remove it from the heat. Add the cooled pickling liquid to the pork in a 1-gallon zip-top bag.
