Ingredients

  • 3.5 to 4 lb Whole chicken
  • 1 package Roasting seasoning
  • Salt and pepper
  • 1 tsp Fresh basil
  • ½ – 1 tsp Oregano
  • ½ cups Olive Oil

Instructions

  • In a large bowl, wash the entire chicken thoroughly with water and remove the unwanted skin. Using a paper towel, dry out the whole chicken.
  • After the chicken has dried completely, pour olive oil over the meat and mix with your hands for a few minutes. It is important to cover the chicken evenly with oil.
  • Sprinkle salt and pepper on top of the chicken’s crust to enhance its flavor, and rub it in all over again. Add the oregano and basil while rubbing the chicken to ensure it’s savory and tender.
  • On top of the chicken, the seasonings are sprinkled on top and rubbed perfectly. After you have coated the chicken, allow the marinate ingredients to settle for a while.
  • Preheat the oven to 400-450 degrees. Put the chicken in a greased baking pan and then place it in the roaster oven for 20 minutes or until the internal temp reaches 155 degrees. Allow to rest and come up to temp at 165 degrees
