Patatje Oorlog (Dutch War Fries)

Ingredients
  

  • 1 tbsp Peanut oil
  • 1 Onion finely chopped
  • 2 Cloves garlic minced
  • 2 tsp Sambal oelek
  • 1/2 tsp Ginger freshly grated
  • 1/2 cup Peanut butter
  • 1 1/2 cups Chicken broth divided
  • 1 tbsp Kecap manis
  • 2 tsp Dark brown sugar
  • 4 Russet potatoes large
  • Vegetable oil
  • Salt
  • 3/4 cup Mayonnaise
  • 1/2 onion finely chopped for topping
  • Freshly ground black pepper

Instructions
 

  • For sauté sauce, pour the peanut oil into a medium saucepan. Add the finely chopped onion and cook until soft. Stir in the sambal oelek, ginger, and garlic and cook for about 30 seconds to 1 minute or until fragrant.
  • Add peanut butter when the mixture is fragrant. Stir in 3/4 cup of chicken broth, kecap manis, and dark brown sugar. Cook for five to ten minutes. If the mixture becomes too thick, add more broth. Take out of the heat. Keep refrigerated in an airtight container until ready to use.
  • Add 2-3 inches of oil to a large pot or fryer and heat to 325°F. Peel and cut the potatoes into fries. Remove any excess starch from the fries by soaking them in cold water and patting them dry.
  • In batches, add the fries to the hot oil, making sure not to overcrowd it. Cook for about 5 minutes until cooked through. Remove fries from the oil and put on a towel-lined plate and repeat the process with the remaining fries.
  • Serve the fries immediately with the saté sauce, mayonnaise, and raw onion on top.
