1 sweet potato Medium, cut into cubes 1 celery stalk diced 3 carrots sliced 1 yellow onion small, diced 1 garlic clove minced Sea salt 1/2 tsp of black pepper 1/8 tsp of allspice 1 tsp of paprika 1 bay leaf 2 cans of kidney beans rinsed and drained 4 cups of low-sodium vegetable broth 1 can of tomatoes diced 4 cups of baby spinach loosely packed 1 tsp extra-virgin olive for serving
In the slow cooker, combine all of the ingredients except the spinach and olive oil.
On low heat, cover and cook the vegetables for six to eight hours, until they are tender.
Add the spinach, stir and cook for approximately 5 minutes until wilted.
