Ingredients
  

  • 1 sweet potato Medium, cut into cubes
  • 1 celery stalk diced
  • 3 carrots sliced
  • 1 yellow onion small, diced
  • 1 garlic clove minced
  • Sea salt
  • 1/2 tsp of black pepper
  • 1/8 tsp of allspice
  • 1 tsp of paprika
  • 1 bay leaf
  • 2 cans of kidney beans rinsed and drained
  • 4 cups of low-sodium vegetable broth
  • 1 can of tomatoes diced
  • 4 cups of baby spinach loosely packed
  • 1 tsp extra-virgin olive for serving

Instructions
 

  • In the slow cooker, combine all of the ingredients except the spinach and olive oil.
  • On low heat, cover and cook the vegetables for six to eight hours, until they are tender.
  • Add the spinach, stir and cook for approximately 5 minutes until wilted.
