Ingredients
  

  • ~5 cups Chicken broth 1 carton and a can
  • 1 can Undrained tomatoes crushed
  • 1 can Undrained tomatoes diced
  • 1 lb Chicken breast boneless and skinless
  • 1 Large onion chopped
  • 1/3 cup Fresh cilantro minced
  • 1 can Green chilies chopped
  • 1 Garlic clove minced
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 1/2 tsp Dried oregano
  • 1/4 tsp Cayenne pepper
  • 3 cups Thawed and frozen corn
  • Salt and pepper to taste
  • 1 package Tortilla chips crushed
  • 1 package Reduced-fat Mexican cheese blend

Instructions
 

  • Heat a large saucepan over medium-low heat. Combine the broth, crushed tomatoes, diced tomatoes, cilantro, chicken cubes, onion, green chilies, chili powder, cumin, garlic, oregano, and cayenne pepper.
  • Boil the mixture. Stir the mixture occasionally to ensure it is well blended. Remove the lid and lower the heat. Allow it to simmer for an hour.
  • Simmer the soup for 10-15 minutes more after adding the corn. Garnish with tortilla chips and Mexican cheese blend.
