Jason’s Deli Broccoli Cheese Soup

This broccoli cheese soup recipe is super easy and delicious. It’s the perfect dish for entertaining guests. And it’s super quick too…chill it in the fridge for an hour before you start cooking, or you can even make it ahead of time and bring it with you on your next camping trip.

Ingredients
  

  • 2 sticks Unsalted butter
  • 1/2 cup Onions chopped
  • 2 -3 Baby carrots chopped
  • 2 tsp Celery chopped
  • 2 cups Chicken broth
  • 1 cup Milk
  • 1 tsp Dried thyme
  • 2 pieces Broccoli chopped
  • 1/2 cup Cornstarch
  • 1/2 tsp Salt
  • 1/2 tsp Garlic powder
  • Pepper to taste
  • 1 cup Cheddar cheese

Instructions
 

  • In a saucepan, melt butter sticks. Stir in chopped onions and baby carrots. Saute the vegetables for a couple of minutes to make them tender.
  • Add chicken broth to the saucepan and top with celery. Whisk to combine the ingredients. Add sliced broccoli to the chicken broth and season with salt and pepper. Gently stir the ingredients to mix the spices well.
  • Then, cook the soup over a medium flame for 15 minutes, while in the meantime, make the cheese layer gravy. Mix the milk and cornstarch in a bowl well using a hand mixer.
  • Add milk to the soup then whisk for a few minutes. Add the cheese to the bowl once the soup has thickened and sprinkle the garlic powder on top. After that, cook it for 10 minutes more to melt the cheese and add more gravy.
  • Add chopped thyme to the soup before serving it in a bowl. You are now ready to enjoy the mouth-watering Jason’s deli broccoli cheese soup recipe.
