The Garlic Butter Orange Roughy is a recipe that I have been making for years. It’s a delicious meal that is very easy to make, but it takes a lot of effort to get the garlic butter to foam correctly. The recipe for this dish is based on one I saw in Fanny’s Best Best, a cooking magazine. I love the simple, yet classic combination of garlic butter, orange roughy, and sweet potatoes.
Pre-heat the oven to 375 degrees. Rinse the filets in water, then pat them dry with paper towels. Place aside.
In a small saucepan, melt butter. Add garlic and olive oil, stirring until well combined.
Prepare a small square glass baking dish by spraying it with cooking spray. Salt and pepper both sides of the fish filets, and arrange them in the dish.
Put the garlic butter mixture on everything. Bake at 375 for about 15-20 minutes, until fish flakes easily with a fork.
When the fish is almost done, top it with paprika, capers, and parmesan cheese, as well as some parsley or basil!
