Ingredients
  

  • ¾ tsp Almond extract
  • 4 cups Apricots (chopped)
  • 2 cups Pineapple with juice (crushed) 
  • 4 cups Sugar
  • ¼ cup lemon juice
  • 1 box  Sure Jell low-sugar (the one in the pink box)

Instructions
 

  • Start by putting apricots in water, then peel, chop, and measure 4 cups.
  • Make jars, lids, and rings clean.
  • Put the chopped apricots, crushed pineapple, lemon juice, and almond extract in a big pot.
  • Mix 4 cups of sugar, and save ¼ cup for later.
  • Sprinkle the Sure-Jell and sugar mix into the apricots, and heat until boiling, stirring.
  • When it boils hard, add the rest of the sugar, and boil for one minute.
  • Take it off the heat, fill clean jars, wipe the tops, close them tight, and put in boiling water for 10 minutes.
  • This makes 8 eight-ounce jars of apricot pineapple jam.

Notes

  • Use ripe fruit: Get ripe apricots and pineapples. They should smell good and be a little soft.
  • Watch the thickness: When you cook the jam, make sure it gets a bit thick but still spreads easily.
