Ingredients
  

For the Dressing

  • ½ cup extra virgin olive oil
  • 3 tablespoons white balsamic vinegar
  • 3 teaspoons sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dry mustard
  • ¼ teaspoon onion powder
  • zest from one lemon

For the Salad

  • 2 grilled chicken breasts (sliced)
  • 4 cups romaine lettuce (chopped)
  • ½ cup kale (chopped into small pieces)
  • ½ cup panko bread crumbs
  • ½ cup parmesan cheese
  • 4 lemon wedges

Instructions
 

  • Combine all dressing ingredients in a jar. Close the lid and shake well. Refrigerate until ready to use. (Vinaigrette stays fresh for one week in the refrigerator - shake it well before using).
  • Add the panko breadcrumbs and the parmesan cheese to a baking sheet to make the breadcrumbs. Broil on high for one minute. Keep an eye on them so they don't burn!
  • Once baking is complete, remove them gently from the baking sheet and place them on a plate or bowl. 
  • Add kale, romaine lettuce, and parmesan cheese to two salad bowls or deep plates. Top with grilled chicken as desired.
  • Sprinkle the breadcrumbs on top. On each plate, add two lemon wedges to the edge and drizzle lemon vinaigrette over both salads. Enjoy!
