Ingredients
  

  • 2 lb New potatoes (skins on and washed) (900 g) 
  • 2 sprigs fresh mint
  • salt

For The Dressing:

  • 4 tablespoons  Lemon juice
  • Lemon zest (grated)
  • Clove garlic
  • 1 level teaspoon  Rock salt
  • 1 heaped teaspoon  Grain mustard
  • 4 tablespoons  Extra virgin olive oil
  • Black pepper (freshly milled)

To garnish:

  • 2 level tablespoons  Snipped fresh chives
  • 6 spring  Onions (trimmed and chopped small)

Instructions
 

  • Boil potatoes with mint in a saucepan, for 15-20 minutes, until tender.
  • To Create a vinaigrette, crush garlic, and mix with dressing ingredients.
  • Drain and transfer hot potatoes to a serving bowl.
  • Drizzle hot vinaigrette over, coat potatoes, add chives and spring onions.
