- 2 lb New potatoes (skins on and washed) (900 g)
- 2 sprigs fresh mint
- salt
For The Dressing:
- 4 tablespoons Lemon juice
- 1 Lemon zest (grated)
- 1 Clove garlic
- 1 level teaspoon Rock salt
- 1 heaped teaspoon Grain mustard
- 4 tablespoons Extra virgin olive oil
- Black pepper (freshly milled)
To garnish:
- 2 level tablespoons Snipped fresh chives
- 6 spring Onions (trimmed and chopped small)
Boil potatoes with mint in a saucepan, for 15-20 minutes, until tender.
To Create a vinaigrette, crush garlic, and mix with dressing ingredients.
Drain and transfer hot potatoes to a serving bowl.
Drizzle hot vinaigrette over, coat potatoes, add chives and spring onions.
