The Garlic Butter Orange Roughy is a recipe that I have been making for years. It’s a delicious meal that is very easy to make, but it takes a lot of effort to get the garlic butter to foam correctly. The recipe for this dish is based on one I saw in Fanny’s Best Best, a cooking magazine. I love the simple, yet classic combination of garlic butter, orange roughy, and sweet potatoes.

Ingredients
  

  • 1/2 lb Orange roughy cut into fillets
  • 2 tbsp Butter
  • 3 Garlic cloves minced
  • 1 tbsp Olive oil
  • Salt and pepper to taste

Instructions
 

  • Pre-heat the oven to 375 degrees. Rinse the filets in water, then pat them dry with paper towels. Place aside.
  • In a small saucepan, melt butter. Add garlic and olive oil, stirring until well combined.
  • Prepare a small square glass baking dish by spraying it with cooking spray. Salt and pepper both sides of the fish filets, and arrange them in the dish.
  • Put the garlic butter mixture on everything. Bake at 375 for about 15-20 minutes, until fish flakes easily with a fork.
  • When the fish is almost done, top it with paprika, capers, and parmesan cheese, as well as some parsley or basil!
