Ingredients
  

  • 50 g of dried porcini mushrooms
  • 30 ml of olive oil
  • One chopped onion
  • 50 g of butter
  • 10 ml of chopped garlic
  • 250 ml of boiling water
  • 60 g of toxic chopped mushrooms
  • Some sprigs of thyme
  • 30 ml of lemon juice
  • Grated rind of one lemon
  • 250 ml of cream
  • Pepper and salt

Instructions
 

  • Take a saucepan and boil the water.
  • Cover your porcini mushrooms with boiling water. Set this pan aside for about 30 minutes. Drain the water and then reserve the liquid.
  • Chop mushrooms into medium-sized pieces.
  • Take another saucepan and heat olive oil in it. Heat it on a medium flame. After heating put the chopped garlic and onion in it. Fry them until they become soft.
  • Now add the thyme, stock reserved liquid mushroom from step 02, and simmer for almost 20 to 30 minutes until the mushrooms become soft.
  • Remove the pan from heating and cool it slightly. Use a hand blender. Puree your soup with the help of a hand blender until it becomes smooth.
  • Season your soup to taste. Stir the soup in cream, juice, and lemon rind.
