- 1 Large onion (chopped)
- 3 cloves Garlic (peeled and crushed)
- 2 lbs Fresh celery (cleaned and chopped)
- 1 qt Vegetable stock
- 1 lb Potatoes (peeled the potato and cut into quarters)
- Handful of fresh parsley including stems (roughly chopped)
- Salt and Pepper (to taste)
Cut celery into uniform 1-1.5 inch pieces, as precision isn't vital.
In a large soup pot, heat oil over medium. Sauté onion until tender.
Add garlic, celery, stock, potato, and parsley. Increase heat, and bring to a boil.
Cover, reduce heat, and simmer for 30 minutes to soften.
Remove pot from heat. Ladle out enough stock to barely cover celery; save extra.
Set aside about 2 teaspoons of chopped celery with a slotted spoon.
Blend soup in the pot with a stick blender, adding reserved stock as needed.
Stir in reserved celery and serve promptly.
