1 kg Salad potatoes 50 ml Rapeseed oil (cold-pressed) 10 cocktail cornichons pickled in vinegar (cut into ½ cm slices, plus 2 tsp liquid from the jar) 3 tablespoon Nonpareilles capers (plus 1 tsp liquid from the jar) 1 teaspoon Apple cider vinegar 1 teaspoon English mustard 1 teaspoon Ground white pepper ¼ bag Dill (roughly chopped) (25g) ¼ bag Chives (finely chopped) (25g) 1 pack Smoked salmon with cracked black pepper and lemon wedges (180g) 2 bags Dolce romana lettuce
Steam potatoes until tender, around 45 minutes. Allow to air dry for 5-10 minutes.
For the dressing, combine rapeseed oil, cornichon/caper liquid, vinegar, and mustard. Shake or whisk.
Transfer potatoes to a large bowl, cut them in half, and season generously with pepper. Pour dressing, and wait for warmth.
Add cornichons, capers, most of the dill, and chives. Toss gently. Adjust sharpness with vinegar or liquid.
Serve in a dish, sprinkle remaining dill and chives. Enjoy with salmon and salad.
