Instructions
Make the Salsa
Dice the peaches and mango into uniform ¼-inch pieces and add them to a medium mixing bowl.
Finely mince the jalapeño (remove seeds for mild heat, keep them for more spice) and finely dice the red onion. Add both to the bowl.
Add the chopped fresh cilantro, fresh lime juice, and lime zest to the bowl.
Season with kosher salt, black pepper, and cumin and cayenne if using. Gently stir everything together until well combined.
Taste and adjust seasoning — add more lime juice for brightness, more salt to elevate flavors, or more jalapeño for additional heat.
For best flavor, cover and refrigerate for at least 20–30 minutes before serving to allow the flavors to meld. Stir once more before serving.
Notes
Make-Ahead: This salsa keeps in an airtight container in the refrigerator for up to 3 days. Flavor improves overnight. Fruit Tips: Use firm-ripe fruit — overripe peaches or mango will make the salsa watery. Avocado Variation: Fold in 1 diced avocado right before serving for a creamy version. Serving Suggestions: Perfect over grilled fish (tilapia, mahi-mahi, salmon, shrimp), as a taco topping, with tortilla chips, over grilled chicken, or spooned into burrito bowls. Do not freeze — fresh fruit texture does not hold up to freezing.
