Pioneer Woman Mexican Cornbread Recipe

Cornbread is one of those staple breakfast foods that you’ll probably eat for a long time. Everyone loves it, and though it may not be a favorite among many, a good cornbread certainly is. It’s easy to make, and it’s also one of those foods that will satisfy your cravings for a few minutes in the morning. This recipe is a Pioneer Woman version of cornbread, but it’s much more than just a comforting dish. It’s made with just a few simple ingredients, and the cornbread is delicious, versatile, and tastes great both hot and cold.

Ingredients
  

  • 1 cup Yellow cornmeal
  • 1/2 cup All-purpose flour
  • 1 tbsp Baking powder
  • 1 pinch Salt
  • 1 cup Buttermilk
  • 1/2 cup Milk
  • 1 Whole egg
  • 1/2 tsp Baking soda
  • 1 cup Cheddar Cheese grated
  • 1/4 cup Shortening
  • 2 tbsp Butter
  • 1 Red bell pepper finely diced,
  • 1 fresh jalapeno seeded and diced
  • 1/2 onion diced

Instructions
 

  • Preheat the oven to 425 degrees Fahrenheit. Mix cornmeal, flour, salt, and baking powder in a bowl. Mix well.
  • Add the buttermilk and milk in a cup and add the egg. Combine with a fork. Stir in the baking soda and mix well.
  • Mix the milk mixture with the dry ingredients. Combine using a fork. Stir in the cheese. Set aside.
  • Melt 1/4 cup shortening in a small bowl. Add the melted shortening to the batter slowly, stirring until just combined.
  • Melt the butter in an iron skillet over medium heat. Sauté the peppers and onions until soft, about 4 to 5 minutes.
  • Transfer the batter to the hot skillet. Ensure that it is evenly spread.
  • Cook for 1 minute on the stovetop, then bake for about 20 to 25 minutes until golden brown. It should be crispy around the edges when done!
