Ingredients
  

  • 1/2 cup unsalted butter (room temperature)
  • 1 ¼ cups Sugar
  • 3 large eggs (room temperature)
  • 4 tablespoons all-purpose flour (sifted)
  • Pinch of salt
  • 1 cup full-fat buttermilk (chilled)
  • 1 teaspoon vanilla extract
  • Dash nutmeg (freshly grounded)
  • 1 tablespoon lemon juice and zest
  • 1 9-inch ready pie crust (thawed and unbaked)

Instructions
 

  • Set the rack in the middle of the oven and preheat it to 350°F. Prepare the pie crust by lightly flouring a work surface and rolling the dough out to a 12-inch circle.
  • Line a 9-inch pie pan with dough, trimming any excess. Make sure the edges are crimped! Put some dried beans or pie weights on top of parchment paper if you want a crisp bottom for your pie.
  • Place the pie pan in the oven and Bake for about 15 minutes or until the crust begins to set.
  • Let it cool completely on a wire rack before filling it. In case you don't mind the bottom of your pie being soft, you can skip the pre-baking step.
  • In a large bowl, cream the butter and sugar with an electric mixer. Add the eggs one at a time, whisking until combined after each addition.
  • Now add both flour and salt to the bowl, whisk until combined, and then add buttermilk, vanilla, lemon juice, nutmeg, and lemon zest, whisking until smooth.
  • Fill the unbaked pie crust with the buttermilk mixture and bake for 55-70 minutes, or until the crust is set and slightly jiggly in the center.
  • Allow your Pioneer Woman Buttermilk Pie plate to cool completely on a wire rack.
  • Before serving, cover, chill in the refrigerator, and slice. Decorate as you like. You can serve it with coffee, or you can add some whipped cream and fresh berries if you wish. Enjoy!
