2 tablespoons Butter 2 large green chiles (diced) 2 jalapenos (finely diced) 1 poblano Chile (diced) 2 onions (diced) 4 pounds Frozen hash brown potatoes (diced) Salt and ground pepper (to taste) 2 cups Sharp Cheddar (grated) 2 cups Monterey Jack (grated) 8 slices bacon (fried and chopped)
Preheat the oven to 375 degrees Fahrenheit. Melt 2 tablespoons of butter in a large skillet.
Sauté the chiles and onions over medium heat until they are browned, almost blackened.
Stir the frozen hash browns into the mixture. Sprinkle it with salt and ground black pepper. Toss well.
As soon as the hash browns are almost cooked, place them in a baking dish with butter. Sprinkle with grated sharp Cheddar cheese and bacon.
Place the baking dish in the oven and bake for about 30 minutes or until hot and bubbling.
Before serving, allow rest for five minutes. You can serve it with boiled eggs or your favorite side dish. Enjoy!
