Ingredients
  

  • 2 tablespoons Butter
  • 2 large green chiles (diced) 
  • 2 jalapenos (finely diced) 
  • 1 poblano Chile (diced) 
  • 2 onions (diced) 
  • 4 pounds Frozen hash brown potatoes (diced)
  • Salt and ground pepper (to taste)
  • 2 cups Sharp Cheddar (grated)
  • 2 cups  Monterey Jack (grated)
  • 8 slices bacon (fried and chopped)

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit. Melt 2 tablespoons of butter in a large skillet.
  • Sauté the chiles and onions over medium heat until they are browned, almost blackened.
  • Stir the frozen hash browns into the mixture. Sprinkle it with salt and ground black pepper. Toss well. 
  • As soon as the hash browns are almost cooked, place them in a baking dish with butter. Sprinkle with grated sharp Cheddar cheese and bacon. 
  • Place the baking dish in the oven and bake for about 30 minutes or until hot and bubbling.
  • Before serving, allow rest for five minutes. You can serve it with boiled eggs or your favorite side dish. Enjoy!
