Ingredients

  • 16 tablespoons Unsalted butter
  • 1 cup Smooth peanut butter
  • 1 teaspoon Vanilla extract
  • 3 3/4 cups Powdered sugar

Instructions

  • Prepare an 8-inch square pan by greasing it with butter. Line the pan with a piece of parchment paper that is 8 inches wide. Leave enough overhand on two sides of the pan to cover the top with later.
  • In a 4-quart microwave-safe bowl, combine the butter and peanut butter. Cover with plastic wrap. Make a few holes in the plastic wrap to release the steam, and microwave it for 2 minutes on high. Stir and microwave it for another 2 minutes.
  • Combine the vanilla and powdered sugar with the peanut butter mixture using a wooden spoon. Stir until mixture becomes difficult to stir and loses sheen.
  • In the prepared pan, spread the mixture evenly. Fold the excess parchment paper over the fudge and refrigerate for about two hours.
  • Remove from the refrigerator and cut into 1-inch pieces. Place in an air-tight container and store at room temperature for up to a week.
