Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 2 ½ cups milk
  • 3 tablespoons white vinegar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 whole egg
  • 2 tablespoons butter (melted)
  • Maple syrup (for serving)
  • Cooking spray

Instructions
 

  • Stir milk and vinegar together in a medium bowl and allow to sour for five minutes.
  • In a large mixing bowl, combine flour, sugar, baking powder, salt, and baking soda. Whisk egg and butter into soured milk.
  • Mix flour mixture with soured milk and whisk until no clumps remain. Be careful not to overmix.
  • Rest the batter in a cool, dry place for at least 4 hours, preferably overnight.
  • Spray cooking spray on the surface of a large skillet and heat over medium heat.
  • Place 1/4 cups of batter in the skillet and cook until bubbles appear on the surface.
  • Once browned on one side, flip over with a spatula. Serve with maple syrup and butter.
