Strawberries

  • 2 lbs fresh strawberries hulled and sliced
  • 3 tablespoons granulated sugar for macerating
  • 1 tablespoon fresh lemon juice

Shortcake Biscuits

  • 2 cups all-purpose flour plus more for dusting
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine salt
  • 6 tablespoons unsalted butter very cold, cut into small cubes
  • 3/4 cup heavy whipping cream cold, plus 2 tablespoons for brushing
  • 1 tablespoon coarse sugar for topping biscuits, optional

Whipped Cream

  • 1.5 cups heavy whipping cream cold
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions
 

Macerate the Strawberries

  • Combine the sliced strawberries, 3 tablespoons of granulated sugar, and lemon juice in a medium bowl. Toss well to coat. Let sit at room temperature for at least 30 minutes, stirring occasionally, until the berries release their juices and a syrup forms. Refrigerate if making more than an hour ahead.

Make the Shortcake Biscuits

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, 2 tablespoons of granulated sugar, baking powder, and salt until combined.
  • Add the cold butter cubes to the flour mixture. Using your fingertips or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Do not overwork — those butter chunks are what create flakiness.
  • Pour in 3/4 cup cold heavy cream and stir with a fork just until the dough comes together. It will look shaggy and rough — that is correct. Do not overmix.
  • Turn the dough out onto a lightly floured surface. Gently pat it into a 3/4-inch thick rectangle. Fold it in half once, then pat back to 3/4-inch thickness. Cut out rounds using a 2.5-inch biscuit cutter, pressing straight down without twisting. Re-pat scraps as needed to cut additional biscuits.
  • Place biscuits on the prepared baking sheet about 1 inch apart. Brush the tops with the remaining 2 tablespoons of heavy cream and sprinkle with coarse sugar if using.
  • Bake for 15 to 18 minutes, until the tops are golden brown and the biscuits are cooked through. Transfer to a wire rack to cool slightly.

Make the Whipped Cream

  • Using a hand mixer or stand mixer fitted with the whisk attachment, beat the cold heavy cream, powdered sugar, and vanilla extract on medium speed until soft to medium peaks form, about 2 to 3 minutes. Do not overbeat — you want the cream to be billowy and soft, not stiff.

Assemble and Serve

  • Split the warm or room-temperature biscuits in half horizontally. Place the bottom half on a plate, spoon a generous amount of macerated strawberries and their syrup over the biscuit, add a large dollop of whipped cream, then place the top half of the biscuit on at a slight angle. Add another spoonful of strawberries and a final cloud of whipped cream. Serve immediately.

Notes

Make-Ahead Tips: Biscuits can be baked 1 day ahead and stored in an airtight container at room temperature. Reheat at 300°F for 5 minutes if desired. Strawberries can be macerated up to 24 hours ahead and refrigerated. Whipped cream can be made up to 2 hours ahead — cover and refrigerate, then give it a brief stir before serving.
Storage: Assembled shortcakes do not store well. Keep components separate. Leftover biscuits stay fresh for 1 day at room temperature or can be frozen for up to 1 month. Macerated strawberries keep refrigerated for up to 2 days.
Freezer Tip: Biscuit dough rounds can be frozen unbaked on a sheet pan, then transferred to a zip-top bag. Bake from frozen at 425°F for 20 to 22 minutes — perfect for spontaneous summer desserts.
Lightened Version: Reduce butter to 4 tablespoons and substitute half-and-half for heavy cream in the biscuit dough. Use coconut whipped cream as a dairy-free topping option.
