Ingredients
  

  • 2 pouches (each 250 g) BEN’S ORIGINAL™ BISTRO EXPRESS™ CONVERTED™ Brand Rice  
  • 450 g (1 lb)  Extra-lean beef (minced)
  • Medium onion (chopped)
  • 1 Clove Garlic (finely chopped)
  • 1 cup  Sweetcorn
  • 1 cup (250 mL)  Red kidney beans (cooked, rinsed and drained)
  • 1 cup  Black beans (rinsed and drained)
  • Medium tomato (seeded and chopped)
  • 1 cup  Canned tomato (chopped)
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • Lime wedges
  • Coriander

Instructions
 

  • In a large saucepan, brown ground beef with onions and garlic for 5-7 minutes. Drain.
  • Add all other ingredients, except rice, lime, and cilantro. Bring to a boil. Cover and simmer for 15-20 minutes, stirring occasionally, until it thickens.
  • While simmering, prepare rice following package instructions. Serve chili with rice. Garnish with lime and cilantro.

Notes

  • Sprinkle shredded cheese on top for extra flavour.
  • A bit of sour cream cools the spice.
  • Fresh avocado chunks add creaminess.
