Coconut Mojito Recipe

Coconut Mojito is a cocktail made from rum, coconut milk, lime juice and sugar. The cocktails are served in a glass filled with ice and have a strong coconut taste. The cocktail can be prepared by adding rum, fresh lime juice and sugar to a glass filled with ice until the required amount of sugar is dissolved.

Ingredients
  

For The Simple Syrup:

  • 1/2 cup Granulated sugar
  • 1/2 cup Water
  • 1 pinch Kosher salt

For The Coconut Mojito:

  • 1 oz Simple syrup
  • 1-1/2 oz White rum
  • 1 oz Full-fat canned coconut milk
  • 1 oz Fresh lime juice
  • Club soda for serving
  • 8 mint leaves for serving
  • Ice

Instructions
 

  • Stir the sugar and water together in a small saucepan over medium-high heat until the sugar dissolves.
  • Take off the heat, cool, and place in an airtight container.

For The Coconut Mojito:

  • Muddle the mint leaves and simple syrup in a cocktail shaker.
  • Pour rum, coconut milk, lime juice, and ice into a shaker halfway full of ice.
  • Cover the drink and shake it for 20 to 30 seconds to get the drink very cold.
  • Place ice into a tall glass and strain the cocktail into it. Garnish with club soda and mint leaves.
