In this blog post, I am going to share with you my coconut mojito recipe. It’s the perfect summer drink that will help you sleep through the night. 

Coconut Mojito is a cocktail made from rum, coconut milk, lime juice and sugar. The cocktails are served in a glass filled with ice and have a strong coconut taste. The cocktail can be prepared by adding rum, fresh lime juice and sugar to a glass filled with ice until the required amount of sugar is dissolved.

How To Make Coconut Mojito

A coconut mojito recipe will delight your palate with the flavours of summer. The refreshing drink is such a nice summer cocktail to enjoy with friends on a hot day. This mojito recipe is very easy to make and you can adjust the flavour of the drink by how spicy you would like it to be. 


For The Simple Syrup:

  • Granulated sugar, 1/2 cup
  • Water, 1/2 cup
  • Kosher salt, 1 pinch

For The Coconut Mojito:

  • Simple syrup, 1 oz
  • White rum, 1-1/2 oz
  • Full-fat canned coconut milk, 1 oz
  • Fresh lime juice, 1 oz
  • Club soda (for serving)
  • 8 mint leaves (for serving)
  • Ice


For The Simple Syrup:

Step 1

Stir the sugar and water together in a small saucepan over medium-high heat until the sugar dissolves. 

Step 2

Take off the heat, cool, and place in an airtight container. 

For The Coconut Mojito:

Step 1

Muddle the mint leaves and simple syrup in a cocktail shaker. 

Step 2

Pour rum, coconut milk, lime juice, and ice into a shaker halfway full of ice. 

Step 3

Cover the drink and shake it for 20 to 30 seconds to get the drink very cold.

Step 4

Place ice into a tall glass and strain the cocktail into it. Garnish with club soda and mint leaves.
