400 g Blueberries 325 g Flour ams 150 g Caster sugar 1 Egg 120 g Seed oil 120 g Whole plain yogurt 120 g Milk 1/2 Berry of vanilla extract 2 tsp Baking powder 1 pinch Salt 1/2 tsp Bicarbonate
Whisk the egg and sugar together with a whisk until the mixture is light and fluffy. Add the milk, oil, and yogurt.
Mix the flour, baking soda, baking powder, salt, and vanilla seeds separately. Stir in the liquid mixture. Beat until smooth.
Mix together the blueberries. You can use frozen ones, but you need to add them still frozen, don’t let them defrost or the dough will turn purple!
Be careful not to overmix. It should be lumpy! Prepare a muffin pan by lining it with cups and filling it with an ice cream scoop.
Bake for 20 minutes at 180 degrees. You have delicious blueberry muffins. Enjoy
