Ingredients
  

  • 1 cup Pineapple juice
  • 1/2 cup brown sugar (Packed)
  • 1/2 cup Soy sauce
  • 1/2 cup Hoisin sauce
  • 1 tablespoon Garlic (minced)
  • 1/2 tablespoon Ginger (minced)
  • 2 pounds Chicken thighs (boneless and skinless)
  • 1 yellow bell pepper (cut into 1 inch chunks)
  • 1 green bell pepper (cut into 1 inch chunks)
  • 1 bell pepper (cut into 1 inch chunks)
  • 1/4 cup Orange juice
  • 1/4 cup Cornstarch
  • Rice (Cooked)
  • Green onions (for garnish)
  • Sesame seeds (for garnish)
  • Red pepper flakes (for garnish)

Instructions
 

  • Prep the 6-quart crockpot by spraying it with cooking spray. 
  • Mix pineapple juice, brown sugar, soy sauce, hoisin sauce, garlic, and ginger in a medium bowl.
  • Pour half of the sauce into the crockpot, then top it with the chicken thighs and peppers, and add the remaining sauce.
  • Cover the pot and cook for 7-8 hours on low or 3-4 hours on high. When the chicken is done, remove it from the pot and set it aside.
  • Stir the orange juice and cornstarch together until smooth in a small bowl, then gradually stir the mixture into the sauce.
  • Cut the chicken into chunks and add to the crockpot. Continue cooking on high heat for another 30 minutes.
  • Serve over rice and garnish as desired. Taste and season as needed.
