Ingredients

  • Pineapple juice, 1 cup
  • brown sugar (Packed), 1/2 cup
  • Soy sauce, 1/2 cup
  • Hoisin sauce, 1/2 cup
  • Garlic (minced), 1 tablespoon
  • Ginger (minced), 1/2 tablespoon
  • Chicken thighs (boneless and skinless), 2 pounds
  • 1 yellow bell pepper (cut into 1 inch chunks)
  • 1 green bell pepper (cut into 1 inch chunks)
  • 1 red bell pepper (cut into 1 inch chunks)
  • Orange juice, 1/4 cup
  • Cornstarch, 1/4 cup
  • Rice (Cooked)
  • Green onions (for garnish)
  • Sesame seeds (for garnish)
  • Red pepper flakes (for garnish)

Instructions

Step 1

Prep the 6-quart crockpot by spraying it with cooking spray. 

Step 2

Mix pineapple juice, brown sugar, soy sauce, hoisin sauce, garlic, and ginger in a medium bowl.

Step 3

Pour half of the sauce into the crockpot, then top it with the chicken thighs and peppers, and add the remaining sauce.

Step 4

Cover the pot and cook for 7-8 hours on low or 3-4 hours on high. When the chicken is done, remove it from the pot and set it aside.

Step 5

Stir the orange juice and cornstarch together until smooth in a small bowl, then gradually stir the mixture into the sauce.

Step 6

Cut the chicken into chunks and add to the crockpot. Continue cooking on high heat for another 30 minutes.

Serve over rice and garnish as desired. Taste and season as needed.
