Ingredients
  

  • 4 tablespoons + extra for greasing dish Butter
  • 1/2 yellow onion (diced)
  • 1/3 cup All-purpose flour
  • 1 1/2 cups  Half-and-half
  • 1 1/2 cups Milk
  • Freshly ground black pepper (to taste)
  • 2 pounds Russet potatoes (thoroughly washed)
  • 3 cups Cooked ham (diced)
  • 2 cups Monterey Jack cheese (grated)
  • Fresh parsley (Chopped)

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit.
  • Melt the butter in a large skillet over medium heat and then saute the onions for 3 to 4 minutes until they soften.
  • Add the flour to the onions and whisk them together. Cook the onion/flour mixture for about 2 minutes or until golden brown.
  • Stir in the half-and-half and milk, then allow it to thicken for 3 to 4 minutes. Sprinkle on some pepper, stir the sauce and reduce the heat.
  • Slice the potatoes very thinly with a mandolin or really sharp knife, the thinner the better.
  • Butter a 2-quart baking dish, and then add half the sliced potatoes and half the diced ham.
  • Add half the cheese and then half the sauce from the skillet. Continue with the remaining ingredients, ending with cheese and sauce. Add more pepper if desired.
  • cover the dish with aluminium foil and place it in the oven and Bake for about 40 minutes, then remove the foil and continue to bake until the cheese is golden brown and the sauce is bubbling, about 20 to 30 minutes more.
  • Remove the dish from the oven. Garnish with chopped parsley if desired. Enjoy!
