- 16-20 jalapenos
- 1 1/2 cup white vinegar
- 1 1/2 cup water
- 1/4 cup salt
- 4 cup sugar
- 1 cup flour
- 1 tablespoon ground turmeric
- 1 tablespoon ground dry mustard
- 16 oz yellow mustard
- 10 half-pint jars with lids and bands
Cut jalapenos in half lengthwise and remove seeds. Chop peppers finely to yield 4 cups.
In a large saucepan, combine jalapenos, vinegar, water, and salt. Then simmer for about 8 minutes on medium heat.
Mix in 1-3 tablespoons of the reserved jalapenos seed, according to your preference.
In a medium bowl, combine sugar, flour, turmeric, and dry mustard. Then stir in the yellow mustard.
Combine the mustard mixture with the jalapeno mixture. Simmer for about 5 minutes, stirring frequently, until thick.
Leave 1/2 inch of headspace in 10 hot, sterilized half-pint jars. Cover with two-piece lids. In a hot water bath, process for 10-15 minutes.
Place jars in a draft-free place and let them set for 24 hours. Unopened jars of mustard will last for one year. Enjoy with your favorite dishes.
