Ingredients
  

  • 450 grams Blackcurrant (3½ cups) 
  • 450 ml Water (1 pt) 
  • 550 grams Sugar (2½ cups)

Instructions
 

  • Get 3 saucers cold in the fridge for the test.
  • Start by cleaning the fruit and taking off the stems.
  • Let the fruit simmer gently in water till the skin is soft.
  • Put in the sugar, and stir till it disappears.
  • Get it boiling really well and keep it going until it's as thick as you want.
  • If it's still not thick enough after 15 minutes, boil for another 5 and check.
