3500 g Beef chuck; (20/80 fat to lean meat) 1.5 teaspoons Cure #1 2.5 tablespoon kosher salt 2 teaspoon Black pepper (ground) 2 teaspoon Granulated garlic 21/2 teaspoon Granulated onion 6 tablespoon Fermento 5 g Dextrose (can be substituted for white sugar) 1 tablespoon Mustard powder 2 teaspoon Celery seed
Grind meat, and mix with ingredients using a stand mixer. Stuff casings.
Tie into 24" rings, then dry in a smoker at 110F.
Smoke at 130 F for 2-3 hours for color.
Poach in 165F water for 15 minutes until 154-158F inside.
Rinse, cool, dry, cut into 6" sticks. Store in the fridge.
