  2. Tie into 24″ rings, then dry in a smoker at 110F.
  3. Smoke at 130 F for 2-3 hours for color.
  4. Poach in 165F water for 15 minutes until 154-158F inside.
  5. Rinse, cool, dry, cut into 6″ sticks. Store in the fridge.
