It consists of small steamed dumplings stuffed with a mixture of pork, vegetables, and dried buckwheat husks. The dumplings are boiled and served in soup or broth. Some versions of the dish include rice noodles.
To make the mixture, mix finely chopped vegetables with pork mince, add seasonings, and mix until it becomes pasty.
Fill the skins of the wontons or gyoza with one heaping tablespoon of the filling each. You can fold the edges up. Make pleats on the dumpling with your hands. To flatten the dumplings, tap them on a work surface. Continually fill and wrap remaining wontons/gyozas.
Put the dumplings on top of cabbage leaves and steam them.
Steam the vegetables in a steamer pan or saucepan and heat the water over high heat. In two batches, steam the dumplings for about 15 minutes each.
