Jamaican Baked Chicken

This Jamaican baked chicken recipe is a simple and easy appetizer that is a perfect way to entertain guests at a dinner party. It’s also popular as a party dish, especially for special occasions. You can serve this as a main dish, too, by roasting it on the barbecue. It is a simple chicken dish, but it is also a very rich dish, thanks to the addition of cinnamon, ginger, and nutmeg. It is a bit on the spicy side, so be careful to use a little less baking powder, as it will cause the dish to be too spicy for some people.

Ingredients
  

  • 2 Jalapeno peppers halved and seeded
  • ½ Onion
  • 2 Cloves garlic minced
  • 1 ¼ Fresh ginger thick slice
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp White wine vinegar
  • 1 tsp Jerk seasoning
  • 1 tsp Ground allspice
  • 1/4 tsp Kosher salt
  • 4 Chicken breast boneless and skinless
  • ½ Mango finely chopped
  • 1 tbsp Fresh cilantro finely chopped

Instructions
 

  • Preheat the oven to 450 degrees F. Lightly spray a 13 x 9-inch baking dish or sheet with vegetable oil. Place it aside for later use.
  • Combine halved and sliced jalapeno peppers, ginger, onion, garlic, olive oil, white wine vinegar, ground allspice, and jerk seasoning in a food processor. Process all the ingredients until they form a thick paste, scraping the sides as necessary.
  • Apply jalapeno paste or mixture to both sides of the chicken breast and place in a prepared baking dish. Place the chicken breasts in the oven and bake for about 25 minutes. Make sure the internal temperature of the breasts is 165 degrees. If not, bake for five extra minutes.
  • Serve the chicken breasts with the proper toppings after removing them from the oven. In order to make the presentation more appealing, place chicken on the plate, along with chopped mango, and garnish with fresh cilantro.
