  • Onion, ½ 
  • Cloves garlic (minced), 2
  • Fresh ginger (thick slice), 1 ¼
  • Extra virgin olive oil, 1 tablespoon
  • White wine vinegar, 1 tablespoon
  • Jerk seasoning, 1 teaspoon
  • Ground allspice, 1 teaspoon
  • Kosher salt, 1/4 teaspoon
  • Chicken breast (boneless and skinless), 4 
  • Mango (finely chopped), ½
  • Fresh cilantro (finely chopped), 1 tablespoon

Instructions

Step 1

Preheat the oven to 450 degrees F. Lightly spray a 13 x 9-inch baking dish or sheet with vegetable oil. Place it aside for later use.

Step 2

Combine halved and sliced jalapeno peppers, ginger, onion, garlic, olive oil, white wine vinegar, ground allspice, and jerk seasoning in a food processor. Process all the ingredients until they form a thick paste, scraping the sides as necessary.

Step 3

Apply jalapeno paste or mixture to both sides of the chicken breast and place in a prepared baking dish. Place the chicken breasts in the oven and bake for about 25 minutes. Make sure the internal temperature of the breasts is 165 degrees. If not, bake for five extra minutes.

Serve the chicken breasts with the proper toppings after removing them from the oven. In order to make the presentation more appealing, place chicken on the plate, along with chopped mango, and garnish with fresh cilantro.
