Rafferty’s potato soup recipe was created by a family who lived in the town of Hagood, Nebraska. The family had a potato farm where they grew a variety of potatoes and other crops. It was a family tradition to have a pot of soup on Sunday after church, and this is what ultimately led to the creation of Rafferty’s potato soup recipe.

Ingredients
  

  • 6 - 7 Potatoes peeled and cubed
  • 1 onion small, chopped
  • Water
  • 8 oz Cream cheese cut in cubes
  • 1 1/2 cups Milk
  • 1 can Condensed cream of mushroom soup
  • 1 can Condensed cream of celery soup
  • 1/2 stick Butter
  • 1 tsp Garlic salt
  • Shredded cheese for topping
  • Bacon bits for topping

Instructions
 

  • Put the potatoes and onions in a medium pot of water and cook until tender.
  • When potatoes are tender, stir in 8 ounces of cream cheese.
  • Pour butter, soups, milk, and garlic salt. Cook for about 5- 10 minutes.
  • Serve it with bacon bits, cheese, and shredded cheese topping.
