Ingredients
  

  • 3 tbsp Butter
  • 2 Garlic cloves minced
  • 4 1/2 cups Asparagus cut into 1/2-inch pieces
  • 3 1/2 cups Chicken broth
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 1 cup Heavy cream
  • Sour cream optional
  • Fresh dill optional

Instructions
 

  • Melt butter in a Dutch oven over medium heat. Add garlic and saute for about 1-2 minutes or until fragrant.
  • Add the asparagus and sauté for about 5 minutes, until it turns bright green.
  • Stir in the chicken broth, salt, and pepper, and bring to a boil over high heat.
  • Reduce the heat to low and simmer for about 10 minutes until the asparagus is very soft.
  • Put the soup back into the pot and stir in the heavy cream until it is heated through.
  • Garnish with sour cream and fresh dill and serve hot.
